I plan to take a sleeper from Amsterdam to Prague, using my eurail pass. I have never traveled by train. Will I have to switch trains enroute, and if so where? With a sleeper, if I switch trains, do I have to book another sleeper?

You dont need to change trains - it's direct.

Does anyone know if that night train counts as 1 or 2 days on the eurail pass? Should I book it well in advance, or can I book it a day or 2 in advance once I reach Amsterdam?

Since it leaves Amsterdam Centraal at 1901 the 1900-rule applies and you need only one travel day (the following).
