my first stop is in Paris ... then I can make all the reservations
(for the rest of the trip) at the station?

Yup - go to one of the large stations (Est, Nord, St. Lazare, Montparnasse, Austerlitz, Lyon), they should be able to make you most if not all reservations you need (may depend a little on the person at the counter).
And dont forget to take a number before queing. ;)

Will it be soon enough if we make a reservation for a night train Paris-Verona 5 days in advance directly at the station in Paris or should we make it before via internet?

Hi.
I think it is not possible via Internet - at least in the direction Paris - Italy.
5 days in advance should be fine if you avoid Friday or Sunday evening.

Hi.
It depends on the train.
Most of them are free to use without supplement or reservation (a reservation includes a supplement and is at the same time a seat reservation).
