If I don't make it in time to a hostel which I have booked (e.g. missed train), do the majority of them just keep the deposit or make you pay for the first night or all the nights?

in general you can cancel your booking up to 24 hours in advance - sometimes you even need to do it 12 hours in advance. if you do not cancel your stay, they will charge the first night.

Can a couple use only 1 single bed and pay only for one bed? If there r no beds, are the hostels eager to do this off the record, too?

maybe in a small private hostel you can do this. but in general this won't be the case. so I have to say NO - that's my personal experience.

I’have a big question that I hope you can help me with that… :|
I'd like to book more than a hostel in different cities, in a row. The problem is that on HI site I can do it at one time: make my own itinerary and book all of them simultaneously and just pay the booking fee [b]once[/b].
However, when I try to book on [ux]https://rail.shop/hostelworld[/ux] , I just can book a hostel at once, so that means I’ll have to pay the service charge for each hostel I book, right?!…
There is other way to book them all and just pay the service charge [b]once[/b] on these websites? How??

on booking sites for private owned hostels like [ux]https://rail.shop/hostelworld[/ux] you will always have to pay the fee for every hostel - as every hostel is private owned.
the HI hostels all belong to one company - they are all one project. that's the difference.
