Emily and I (both 19) are going interrailing for the first time this July! We have the 10 in 22 day global interail tickets.

Our route so far is this:
Paris-Marseille or Toulon-Rome-Venice-Vienna-Prague-?-Paris

Is this route doable?
Where do you recommend we go between Prague and Paris?
We'd like to go 'off the beaten track' at some point, any ideas where?
How far in advance should we book YHA? Can, for example, a YHA be booked from France for a YHA in Italy?
How far in advance do we need to book TGV fast trains? And what can we expect to pay in supplements?

Lastly, we are undecided whether or not to take a tent. We would mainly be staying in YHA, but are considering taking one for emergencies or to save a little money. Is it worth taking one?

The route should be easily doable, you even have some spare travel days left if you'd like to make a spontaneous day trip or similar. :)

I'd recommend going to Marseille instead of Toulon, way more to do and see IMO. Maybe you want to make a stop along the Côte d'Azur (Cannes, Antibes, Nice, Grasse etc) or at the Ligurian Coast (Rapallo maybe).
Definitely go along the coast all the way from Marseille to Rome, scenic railway!

Peter would certainly recommend going to Ljubljana in between Venice and Vienna. ;)
However, an alternative off the beaten track would be going via Bolzano and Lienz along the Dolomites - maybe add a daytrip to Merano as well. Oh, and I cant resist recommend visiting Graz. 8)

Between Praha and Paris I'd go to Dresden in Germany and Bruges in Belgium. Strasbourg would be interesting too...

Just some suggestions... :)

As for reservations: If you have to rely on a ceratin connection or you have to be somewhere at a ceratin date it's advisable to book as early as possible. However, in most cases it should be sufficient to make all the reservations for the following part of the trip when you arrive at the train station of the town you're currently staying.
Note! TGV trains at peak times are more expensive (10€); in general there is only a certain number of reservations available for InterRailers on each TGV.
