Hi Kostas ...
You have to find the best way for yourself: if you book too much in advance, you are fixed on dates and lose a lot of the freedom of InterRailing.
But if you do not book in advance for the big cities, you will get a bed, but maybe it is in a dirty hole, expensive or ...
So I recommend: if you know the exact date when you will arrive in a city (for example as it is your starting place or you have booked a night train for a date and know you will stay in this city to a special date), book in advance with online: [ux]https://rail.shop/hostelworld[/ux] + [ux]https://rail.shop/bookingcom[/ux]
to stay flexible and if you do not know the exact date when you will arrive in a city, book one or two days at least in advance (three are better!) ... :)
I do NOT recommend to travel to a town and start there with searching for a hostel - you have to phone, walk a lot until you will find a bed.
better to do it in the evening before via internet - so you save a lot of time: you arrive in the new town, go to the hostel, leave your bag pack, get a shower, get some information and maps from the hostel staff and just go into the city to have fun...
have a sunny tour of Europe, Peter :)
