Are there any places you'd like to visit in between Graz and Barcelona? Ljubljana, Venice, Milano, Zurich, Genève, Lyon, Nice, Marseille etc?

Themost comfortable way would be:

Graz 1855 - Linz 2148 IC
Linz 2314 - Zurich 0732 EN
Zurich 0732 - Geneve 1015 IC
Geneve 1117 - Montpellier 1457 TGV
Montpellier 1509 - Barcelona 1959 TALGO

Supplements payable for EN, TGV and TALGO; especially for the TGV it's advisable to make the reservation as early as possible.

From Montpellier to Barcelona most of the tracks run close to the Mediterranean Sea. However, you could go via Milano and Marseille, quite scenic too, especially between Genoa and Cannes. For this trip i'd calculate a stop somewhere en route, like Milano, Nice, Cannes etc.

Defintely go for Paris! :)
Don't take the direct night trains from Madrid or Barcelona as they are very expensive. There are domestic SNCF night trains running from Hendaye (Atlantic) and Cerbere (Mediterranean) to Paris. Alternatively there are freqent TGV connections from these stations to Paris.
For going back to Graz from Paris the best way would be to take the DB Nachtzug from Paris to Munich and then continue by IC/EC to Graz.
