I know that I can buy these tickets at the stations but what are the chances of them being sold out in the summer? Is it possible to buy these tickets on arrival at one city (say Amsterdam) for the night time train journey in two days time? Or can I just buy them prior to the train leaving the station?

The best is to buy the tickets some days in advance.
I always buy the tickets for night trains when I arrive in a city.
For some trains, if needed in high season, even one week in advance. But it always depends of my mood. :)
No risk, no fun !! *joking* ;)
You can already buy for example tickets for a night train Berlin to Vienna or to somewhere else in Amsterdam.
