Our trip ends in Santiago de Compestelo, Spain. We’d like to take the train to the closest major city where we can fly to the US. Any recommendations?

First look into flite options. San. itself has an airport-so with some changes you can get over that ocean.
It should be self evident without thinking that capitals-in this case Madrid, will give you best chance. But USA all tend to stick to their plans/programs and all that, so your airline may not serve it. google also has google.flights.

Santiago has a small airport with limited options, Madrid is one of them. Nearby A Coruña (LCG) has more european options. Porto in Portugal, has some direct flights to NY and can be reached by trains via Vigo. Lisbon and Madrid are the next major airports and they have a selection of USA destiantions. But this misses a point of travel planning. There are a few dozens of commercial airports in Spain and Portugal and hundreds in the USA - the direct USA flights available from Lisbon or Madrid may not be convenient at either end!
