Where have you looked? Czech Railways website cd.cz shows train options all the way from Prague to Bucharest. The internationally famous Germna Railways pan-European database will find options all the way to Sofia. bahn.com

But Greek Railways say all international services are suspended https://www.hellenictrain.gr/en/international-railway-services

The Serbian rail network also has many routes suspended

For now not all the way-furthest you can get is to Border BG-GR, Kulata. THsi route has to go via ROmania, as NO trains in/out of Serbije at all, npor via Macedonia. IF you´re hell-bound on using vlak/train: bridge the gap till first stop where trains run again in GR-if not wanting to waste lots of time and effort: use direct bus from Sofia to Thessaloniki. See also seat61.com for advice about this.

Three years ago there was a connecting bus in Kulata, taking you to Strimon in Greece (short way), from where you took the train from Alexandropolis to Thessaloniki. No reason to take bus all the way from Sofija all the way to Thessaloniki!
