with an existing ticket/ pass or buying tickets at same time? And any particular trains? Most sleeping cars in Germany are run by Nightjet of Austria unless you are looking at going to Sweden.

Hamburg to Munich Interrail reservations for nightjet night train are available online from ÖBB (Austrian Railways) at https://tickets.oebb.at/de/ticket/travel
You have to select a connection and "Interrail" as a discount.

I found it, but I didn't find where to book a sleepingcar, just to make a reserve a seat.

Like I said, you have to select "Interrail" as a discount. In the right upper corner there should be a box "who is going" which is set up with 1x adult as a default. Click there, "add discount" and look for "Interrail/Eurail Global Pass" towards the bottom of the list.
Then you should see the different options (seat, couchette, sleeper), starting from 14€ for a seat. It can be that the train is fully booked already. What date are you looking at?

I did not find the options seat, sleeper, couchette. The date is 14. this mounth and it is the train that is leaving Hamburg at 22:12

2212 is an ICE (InterCity Express), a regular high speed travelling overnight. No couchette or sleeper accomodation available on this train, just regular seats (2nd and 1st class) and a restaurant.
No reservation needed, but possible to get one if you want.
The "real" night train with couchette and sleeper accomodation is the nightjet departing 2029 but this seems to be fully booked.
