I brought the interrail global pass for two months and wanted to ask if it’s possible to go on separate trips. Can I use more than one inbound and outbound way or do I have to stay out of my home country the whole time?

"An Interrail Global Pass is valid for travel in your country of residence during one outbound journey and one inbound journey that occur during travel days at any point in your trip." says Interrail. The phrase "at any point in your trip" at the end should cover the last part of your wishes in my opinion, but there is only one out- and inbound. So you have one out- and inbound pay for yourself (from the border), if you go home inbetween.

But is it possible to go through your home country as transit? For example going from the Netherlands to Austria through Germany and Germany would be the home country.

Yes, your real residence is not important. As long as you don't use it in Germany more than 2 days in total.
