I'm happy to get on board, but want to know your pennies on street/train wisdom and female safety. Do Italian/ spanish train mix gender in their sleeping couches reservations?
And also: thanks to the 50% flashsale I bought first class, just for the working space. Is there more wagon safety with first class sleeping couches (doorlocks and so on)? Or would a fully booked second class wagon and coupees be safer for a single woman?
Is there anything extra to consider?

The proper word is COACH, a couch is something in your livingroom.
ESpana does not have ANY sleeper trains anymore.
Italy-like most railways that still have them, have either couchette (6 or 4 in a cabin, most often however only as 2nd cl.-mixed sex, the original idea was you ´sleep´ in your dayclothes) and real sleeper (vagone letti)-due to still prevailing covid rules these are as for now ONLY rented out as complete cabin-for how many (max 3) as can fit in. Which should answer your problems.
It depends on the actual train/comapny but in most it is possible to somehow lock the door from a compartment-but its quite easy for those in the know, incl conductors who have to check, to open it. PLUS that the original set-up for real sleeper coaches is to have an attendant in every car who also guards your tickets-which means s/he can wake you up before arrival stop.
