Hi!
I would like to buy a interrail ticket and I'm 27 when I'm going to start my trip. I will turn 28 during the interrail, so I'm thinking am I allowed to I travel with youth ticket to the end of my interrail?

If you order the pass you have to give your birth date. If it's not consistent with the age you ordered I think "computer says no". If regulations are unclear (I can't find anything about this) the law in most countries says that the benefit of the doubt goes to the party which did NOT make those regulatios.

It's clearly stated in several languages on the Interrail website that you have to be 27 on the start date of the pass - not the end date. Choose a pass type and go to the buying page where the different durations are shown with calendar icons, scroll down to the General Conditions and then below them is a link to Additional conditions for youth travellers.
