Istanbul-Sofia: https://rail.cc/blog/bucharest-istanbul
Sofia-Belgrade: https://rail.cc/train/sofia-to-belgrade
Bulgaria (Sofia) is an EU country. Therefore it should be possible to travel with a Schengen visa and your passport. But please check before the country information, as I don't know all details for all variations of nations.
