We want to do exactly what is listed as "option #2" in the Flamsbana video: take a train from Oslo to Myrdal, bike from Myrdal to Flam, drop off bikes and take Flamsbana train back to Myrdal, take a train back to Oslo. I cannot find the logistical details/schedule/travel times to accomplish this.

It is definitely a nice trip, including the bike down to Myrdal.

Good is to either have a very early trip on Flamsbanan or a very late one. Otherwise Flamsbanan is full of tourists. Or select a trip which is not directly connected to a long-distance train in Myrdal.

Book online. Pay in the Cafe and pick it up outside. Friendly and relaxed.
Bike trip down from Oslo to Flam. You can do it fast or have some photo stops in-between. It always gets down-hill, therefore easy to do. The first part (2km) might be a bit difficult if you are not used to Mountainbike. But just get off and walk. Then it is easy as well.
In Flam you have a supermarket where you can buy some water or something to eat. Also restaurants if you prefer. Flamsbanan runs every hour.
