Hi Julia, welcome to railcc!

I assume you want to make a day trip and return to Skien/Porsgrunn on the same day?

This unfortunately rules out the Bergen line (Oslo to Bergen), probably the most scenic line of Norway (including the branch line to Flam: [ux]https://rail.cc/blog/the-flam-railway/[/ux]

In the vicinity of Porsgrunn/Skien there are not many options (as the railway network in Norway is not very dense in general). If you are looking for a shorter rail journey with more time to spend the day at your destination you could go to Notodden to explore the town and area (UNESCO world heritage including Rjukan).
Alternatively you could travel on Sorlandsbane with a change of trains in Nordagutu and either go to Kristiansand (direct service) or Arendal (change of trains in Nelaug).

Maybe a simple round trip Porsgrunn - Nordagutu - Oslo - Larvik - Skien - Porsgrunn would be interesting as well?

Flo
