Is the train sold out on Friday 28 July - I cannot buy online tickets for either of the two daily departures that day. How can I find out?

Hi and welcome to railcc!
I dont think that the trains are sold out - there would be another message on [ux]https://rail.shop/renfe[/ux] if the trains were sold out. The message that shows up there suggests that booking is for some reason not open yet.
