We will be staying in Hampshire UK during December and want to travel to Colmar. Wondering if we can do so from Southampton rather than having to go into London for Eurostar or Gatwick to fly.

Hi Jennie, welcome to railcc!
If you dont want to travel with Eurostar from St Pancras to Paris you have to take a ferry. There are no ferries from Southampton but from Poole (Brittany Ferries to Cherbourg) and from Portsmouth (Brittany Ferries to Cherbourg, Ouistreham and Le Havre).
