you can buy a ticket from about 170€, depending on when you book and when you want to travel. You can buy one ticket from Santiago to Hamburg at [ux]https://rail.shop/omio/Santiago-de-Compostela/Hamburg[/ux]

However, you will see that the connections are not very convenient because you have to stay overnight in Hendaye and you will either have to continue veeery early in the morning or will arrive quite late in Hamburg.
Depending on how much time you have it might be more convenient to make another break of journey along the way, for instance in Paris; and travel in three steps:
1) Santiago - Hendaye (even better would be to stay in San Sebastian)
2) San Sebastian - Paris
3) Paris - Hamburg
