Hi there and welcome to the forum,
I did Krakow to Prague last year and, as it's quite long, I recommend a night train with a couchette. It's a popular route so you should book the trip when you arrive in Krakow Glowny. The couchette is comfortable and you'll be with other backpackers. It's a great way to swap stories, get advice from people, and share some beer. Because it's a Polish train it's cheap; around 12 Euros for the couchette; and you get into Prague in the morning much fresher than if you had sat in a chair all night.
In Krakow I recommend the Dom Touristy. I had a single room last year for 10 pounds. It's near the station and the Old Town.
In Prague there's a good and cheap place called Hotel Hlavkova, very near a metro station; and with shared and private rooms. The old town is a 15 minute walk along by the river. So it's easy to find.
I've not done the other trips on your itinerary but you can research them all here:
https://rail.cc/en/search-interrail-route
That site will tell you exactly how long each journey takes on your days of travel and changes of train, if any, that you might need to take.
Hope this is a helpful start. Have a great trip and don't forget to come back to the forum, when you return, to offer advice.
