Me and my girls are going from Denmark to Praha, Krakow, Vienna, Rome, Barcelona, Perpignon, Paris, Normandy, London. We might adjust our route a bit my question is that were going to use night trains mostly and wonder if it will be cheaper to buy point to point tickets instead of IR passes and pay extra for the night trains?

impossible to answer, start with reading the various formula for IR: it will all depend on HOW LONG the period will last in which to use. IF you plan to make long stops, then IR is likely not the best buy. Will also depend on if youre are willing +able to prebook and thus put yourself into a preplanned agenda. OR if you want train-only (as there are so many sectaric trainusers) or are open to bus some segments or fly.
Many nighttrains do not exist on your segments and many more are likely to be scrapped for next year.
