We're planning on travelling through Germany, France, Netherlands and so forth in the middle of august. is that considered the high season? will it be impossible to get accommodations in the biggest cities without booking in advance? we were hoping not to get too tied up with reservations but sleeping on benches are not quite our bag either. will it be me more expensive not to book in advance? how much should we expect to pay for pretty basic lodgings in that period?

Sometimes I phoned one day before arriving in a big city and asked at the hostel for a reservation for the next day. The reservations always was for free. But it sometimes when I arrived, they forgot my reservation. :(

and it depends if you prefer a double bed room or dormitories which are normally cheap ... for a bed in a dormitory you have to pay 10 to 25 EUR, for a double bed room 20 to 45 EUR ... :)

its a nice idea to use phone instead of internet when booking 1 day prior to arrival. human voice is a constant reason to believe booking :) the hostel system really offers great stuff for people who look for just travel, as well their staff are helping visitors. (i been to poland just once, used 3 different hostels and they were really kind and helpful)

So, would you reccommend foregoing any internet booking?

I recomend internet booking !!
Phoning is nice, but if you have something written and payed by credit card, you have your bed for the night.
I travel Europe now since more than 10 years. And I often had bad luck when I only phoned for a reservation and the next day I arrived and no one could remember my call and my reservation by phone. :(
Because they had travelers which arrived before me and the hostel filled up their rooms, so that they did not need anymore the persons who did their reservaiton by phone. This is my experience.
