Does anyone know of a way to travel South from Poland, to Pristina, Kosovo by rail? Hopefully passing through Hungary along the way.

Hi!

Well, a straightforward route would be Warsaw - Budapest - Belgrade; if you want to travel by rail only you would then have to continue to Skopje and take a train from there to Pristina.
If you are fine with bus/taxi on parts of the route you could take a train from Belgrade to the border at Rudnica via Lapovo or to Merdare via Nis and cross the border by bus/taxi to Pristina.
Also consider the special political situation of Kosovo and check for entry requirements and security advisements on the website of the US embassy.
