So in looking to go inter railing in the summer with my gf my friend and his gf

Our route is
Paris > Amsterdam > Berlin > Prague > Krakow > Vienna > Budapest

How do I book tickets from Paris to
Amsterdam etc and it looks like I have to pay €60 odd i thought the idea of the ticket was so I didn't have to

Hi.
Interrail is your ticket - but some trains require an extra reservation. This is for example the case for the THALYS train from Paris to Amsterdam. You can avoid it and use slower connections. As Thalys is definitely not worth to use with this high reservation fee.

After traveling to my city can I still use the ticket to get a train to wherever my hotel is?

HI.
If a train requires a reservation, you have to buy it before, for example at a railway station. The common way is to buy it at a station, not online.
If a train is free, without a reservation fee, just enter it.
Public transportation in a city is usually not included in Interrail.
