I am going away for a month july 23rd - aug 25th this is the route - Budapest, Bratislava, Vienna, Lake Bled, Zagreb, Zadar, Hvar, Dubrovnik, Rome, Florence, Pisa and Venice.

Should we book hostels before we go or should we wait till we get closer to our destinations i can see pros and cons for both...Any advice would be most appreciated.

hey,
this depends on many variables. How many people are you? If you are more than two or just want to stay in private rooms, I advice you to book in advance, especially in Dubrovnik I can advice you to book in advance. I was there last year and saw a lot of people who looked for a room, but didn't find one.
How are you going to travel from Dubrovnik to Rome? Last year we took a ferry from Bari to Dubrovnik, which was an overnight ferry. But the other way round it was in the day. So maybe you have to add a stopover in Bari, but you have to check the timetables (ferry and train).
But back to the hostels. If you want to add more flexibility to your trip you may book the next one or two hostels in the current city.

there is just the two of us and we would want a private room so i booking in advanced would seem the best option i suppose. getting the ferry from split to ancona.
