Hello,
in which way (and how strictly) do I have to proof my residence country? In fact, I have a German identity card with a German address registered, but I live in France since more than a year. But as EU-citizen, there is no obligation to register officially in France. So, nothing on my Identity Card says that I live actually in France. So, can I use an Interrail Pass in France without a risk?

It will be a risk ... as you can not proof it. you need official documents ...
I don't know what official documents can be in your case ... sorry... :(
And if you buy your ticket via the internet, you will get your French version. if you buy it at a station, I am sure, you will get a German version... maybe you ask directly at a big station...!?!?
