I try to answer your question.
1) If you look for someone, who you can travel with, this site provides an interactive section where you can find travel partners: [u]https://rail.cc/en/travel-partners[/u]

2) One lovely route from Italy to Germany is this one via Zurich: [u]https://rail.cc/en/train/milan-to-zurich[/u]
In Germany you can further go to Füssen to see Neuschwanstein, Heidelberg or visit Dresden. If you going from south to north I would recommend to visit the Rhine Valley :) from Mainz to Cologne: [u]https://rail.cc/en/train/heidelberg-to-cologne[/u]

3) From Germany you can to the UK via Amsterdam and use the ferry or via Calais. The Eurostar has high reservation cost for interrailers. You can also take a bus, e.g. from Paris or any big city in Germany.

4) Reservation via Smartphone: Yes that would be great :D I thought of a railcc app that offers that service. Mostly it is possible to book a reservation online, but normally you have to print it out or something like that. Some companies offer a pure e-commerce service, but I think you have to check for each railway company. E.g. DB allows you to make reservations online. I've never tried to use the DB-App. But nevertheless you can use the normal website. Also SNCF allows you to make reservations.

6) Normally the local public transport is not included in the IR-Ticket. DB provide only a few S-Bahns. I think the S-Bahn in Hamburg, Munich and Berlin are from DB. So it will be possible to use them :) You have to pay extra fees for the U-Bahn .
